purslane is one of the most nutritious greens
there is, and it grows happily in our summer beds with no inputs and very little water. We harvest the tender stems and leaves by hand while they're plump and crisp, before the plant gets leggy.

Eat it raw — that's where it shines. Toss whole sprigs into a salad with tomato, cucumber, and a sharp dressing, or use it the Turkish way with yoghurt, garlic, and olive oil. The stems are as good as the leaves. A few sprigs alongside grilled fish or meat cut through the richness perfectly.
