How we grow it
Grown through the summer and left to mature fully on the vine, in composted soil with no synthetic inputs. Butternut is a patient crop — it needs the whole season to develop its deep colour and dense flesh, and then a period of curing after harvest, which is what concentrates the sweetness and gives it that long storage life. We grow it properly and cure it properly.
The product
Dense, sweet, and deeply flavoured, with the smooth nutty character that makes butternut the most versatile of the winter squashes. The flesh is a rich orange, firm and almost creamy when roasted, with very little waste. Properly cured, it keeps for weeks in a cool spot — one of the few vegetables you can buy fresh and hold onto. Available in three sizes.
